This Orange Almond Cake was made for my husbands birthday. Friday Magazine introduced the world famous chef, Ms. Silvena Rowe, and she was taking over the food recipes. And one of her first recipe published was this Orange Almond Cake, and the sheer beauty of that picture of the cake got me drooling…I knew this was gonna be a masterpiece, and decided to surprise my husband by baking this recipe.
And, take my word, this is the best cake that I had ever had. The Orange Almond cake is a stunner- a citric burst of flavors. Every little bit is loaded with orange flavour and the warm hint of almonds, a treat for all your senses.This has been a regular ever since, and i make it when i have special guests, and I love to see them go wow and enjoy every bite…It is quick and easy to make, and delicious without frosting.
The Orange and Almond Cake is so yumm and orangey, with a beautiful texture cause of the almond flour thats used instead of white flour. Trust me….Cakes will never taste the same anymore.. I am enjoying making/ trying such different recipes these days..

All you need is a batch of Oranges and almond flour (Kindly check at your nearest store- all organic food sections store almond flour)

Wash oranges and boil them (whole oranges) in water for atleast 40 minutes until they are soft. This process removes the bitterness from the skin. Leave them to cool and puree them (it is best to remove the seeds before you make the puree).
Preheat oven to 190 C. Butter a 9 inch/ 8 inch cake pan (loose bottom pans are the best for this cake) , and line it with baking paper.
Beat eggs and sugar for about 5 minutes, until thick and creamy. Fold in the ground almonds+baking powder in 2-3 batches, using a wooden spoon. Finally, add the orange puree and stir until all are evenly combined. Do not over mix...
Pour the cake mixture into the prepared pan, and bake for 45 minutes, until the cake is firm to the touch in the middle. If its still wet, leave it for another 5 minutes, and keep checking with a skewer. Wait till the cake cools, and dust with icing sugar.
You dont need anything else with the cake, cos its so good. Garnish with some orange peels and berries.
